What is your plan to VOTE in the November 2 Virginia election!? I know it may sound silly to create a plan for something can take as little as 10 minutes, BUT, if you’re like me - not having a plan in place is just inviting other parts of life to interfere. There’s a saying that all politics is local, and that couldn’t be more true than in statewide elections. These are the most consequential elections to vote in because the decisions your local elected leaders make have the most impact on your day-to-day life! 

Don’t procrastinate, and don’t de-prioritize:

- Make the time
- Make a plan
- Grab a few friends and loved ones
- And VOTE for Democrats for state legislature!

Tell me you have young children without telling me.???????????? By the end of the week my fridge is FULL of half eaten fruit. Apples with bites taken out and put back, mushy half eaten bananas, and berries that won’t last because even though she ate a whole pint of blueberries in one sitting last week, she doesn’t like “blue food” this week.???? We do everything in our home to produce as little waste as possible, especially with food. At the end of the week, I do three mindful things to clear the fridge for the coming weeks’ groceries. 
1️⃣ Smoothies???? All half eaten fruit, fruit soon to be bad (think mushy or dried out but not molded yet) & leftover greens will all go into a smoothie. Sometimes fruit can miss it’s peak to be eaten raw, but blending it into a smoothie would never taste any different. 
2️⃣ Stock???? All vegetable waste from the week gets saved and boiled into stock, which I can use later in the week. Ends of onions, broccoli stalks, unused celery, woody asparagus ends, peels from carrots & leftover herbs create a delicious flavorful veggie broth. 
3️⃣ Stir-Fry???? During the week we cook veggies every night but often have leftovers. I save all pre-cooked veggies in a separate container and reuse them in a stir-fry at the end of the week. Green beans, carrots, broccoli, cabbage & more all get mixed with a protein and served over rice.

Wasting food has irreversible environmental consequences — It wastes the water and energy it took to produce it, & generates greenhouse gases in the process. Food that sits decaying in landfills also produces more greenhouse gases. All this contributes to climate change - all for food that doesn't even get eaten! According to the WWF, the production of wasted food in the US is equivalent to the greenhouse emissions of 37 million cars.???? I know that what I’m doing won’t save the world, but I feel better knowing that I’m doing my part to help, even if it’s just a few smoothies & a carton of stock each week. I urge you to research the cause and make changes in your home to help eliminate as much food waste as possible.????
