Earlier today I headed up to beautiful Warwickshire to film with the incredibly inspiring @__healthresults (@theprimalliving ). We made 7 quick and simple recipes in just a few hours, including toad in the hole, pancakes, pesto pasta, peanut butter chocolate fudge, tuna pasta bake, cheese waffles and Indonesian chicken noodle soup. Most of which are already on @theprimalliving app. 
All the recipes are #lowcarb #grainfree and #glutenfree and all used the latest range of fibrehydrate products which are 0 carb and 0 cal, pure fibre products-  fibre flour and pasta (spaghetti, tagliatelle, noodles). Total game changer for me and anyone - especially those with diabetes, who might want a low carb alternative to the wheat based pastas. I am heading back up tomorrow to film lots more recipes and I really can’t wait.

A couple of days ago we headed off on ‘holiday’ for the final few days before school. We stayed at a hotel on the way to our final destination so (fortunately) we were only half way there ( 1 hr 40 from Cheltenham depending on traffic!). 
Frustratingly-& all my fault- my transmitter ran out on my @dexcomuk last night. It was 6pm &just after we had been in the swimming pool. Care free splashing about with the girls. My level 4.6mmol suddenly disappeared. I looked at my watch&my app had stopped working so I went to change my sensor (I had lots spare with me) but then realised it was the transmitter too that needed changing. I didn’t have another. There was simply nothing I could do other than head home to find one! 
So, if anyone followed along to the DRAMA of last nights stories,thank you!Thank you for so many kind, concerned & thoughtful messages! Also to the many of you raring to get in your cars to bring me a Dexcom transmitter! 
Many tears were shed on my journey home as I was so cross at myself! 
Life before Dexcom I knew nothing different to finger pricking. Of course, I could have just done a few days of just that. But as time and years have past I totally rely on my Dexcom for security. It tells me when I am low, when I am higher than my time in range targets. It is a security blanket as a mother of little girls. So suddenly not having it for 5 days when I was going to be away felt pretty daunting. 
I jumped in the car (finger pricked to make sure I was safe to)&drove home only to find two transmitters! Relief.I popped one on to calibrate, finger pricked& got back in the car&got back to my babies. Florence had waited up.
It’s a horrid feeling- vulnerablity, especially to an inescapable condition like t1d. I am immensely prepared most of the time but it’s a long lesson learned&another thing I need to add to my future list! 
One thing you can’t be is spontaneous (or forgetful) with diabetes. 
But I got it. I am with my family&we are now finally at our destination- beach.

Natures sweeties! Recipe below! 

Have you got blackberries? An oven? Some greaseproof paper? 

Then you should be able to make these fruit leathers! Such an easy process. Fun to make. My children LOVE them. Funnily enough the tangi-ness of them I can ‘taste’. I just wouldn’t be able to tell you they were blackberry! Come on taste and smell, I want you back! 

We have blackberry bushes outside the house so yesterday Florence picked some and we decided to make these leathers. 

What you need: 

200g blackberries 
1 tbsp lemon juice 
1tbsp raw honey (this is preference for texture but you could replace with sugar free syrup to reduce carbs) 

Preheat oven to 50degreesC 
In a blender or food processor blitz the ingredients to a smoothie like texture. If you don’t want the pips you can strain the mix through a sieve. 

Grab a baking sheet with some grease proof paper. I suggest an a4 sized sheet. 

Pour your mix straight on and shape in to a rectangle. 
You don’t want it to be too thick as you will be cooking for hours more if so. 
Place in oven for about 7-8 hours until you can remove. The mix will be dry to touch and you will be able to peel away from the paper. 
Cut in to strips length ways. I make about 10 in total. 
Keep in a sealed container and enjoy!

Can I replace with another fruit? 

yes, anything should work. If you are using Apple then you’ll need to create a purée first. The wetter the mix, the longer it will take to turn to leather.

RECIPE BELOW! 

It feels like we have been isolating forever and although I feel pretty well in myself, I still have no taste, smell (or appetite)! Not sure when it will come back but having asked everyone on stories yesterday, the general response was around 5 months (?). For some it was much quicker snd others, over a yr! A year! 

Given I am a recipe developer and cook, this isn’t ideal! There will have to be a lot of trust to my children’s tastes as my husband has lost his too! 

I miss smelling my children (the nice smells), the food I cook, fresh washing, my perfume, chocolate, just life smell! I miss tasting EVERYTHING! But, you know, if this is the worst I have been left with then I count my lucky stars! I feel i have got through Covid with relatively mild symptoms on the whole. 

Gosh, I wish I could delve in to this low carb toad in the hole, hopefully soon! In the meantime, here is the recipe. 

Tag anyone who might like it, esp those with diabetes as it is so much lower in carbs than the regular grain based recipe:

4 tbsp goose fat 
110ml double cream (or tinned coconut)
110ml whole milk (or other milk of choice, might just change consistency a little)
4 large eggs
70g arrowroot powder (necessary,
I don’t have an alternative)
30g ground flax or ground almonds 
8 good quality sausages (just be mindful of ones that contain lots of additives like sugars and grains if counting carbs)

Preheat oven to 180c
In a greased high sided dish, add sausages and cook for about 20 mins until turning golden. Do NOT overcook as they will burn later on. 
15 mins in to this process make your batter
Place the double cream, milk and eggs in a bowl and whisk
Add in ground flax / almonds and arrowroot. Whisk to thick custard. 
Carefully open oven door and add 4 tbsp goose fat in to same dish as sausages
Close for 5 mins to really heat up 
Now CAREFULLY with no children near you, open door and poor the batter straight over the sausages in to the dish. Shut the door and wait for the magic to happen. 
Cook for approx 20 mins until golden and risen. 
Serve immediately.

I want to share this as I want other t1s to be able to see that I am (currently) ok! I am a good few days in now. 
I am 34, t1 diabetic of 16yrs, double vaccinated (AZ),hba1c of 4.8%.I have 2 little girls who have no symptoms (doing lat flow spot checks on eldest-negative,will pcr if symptoms) & husband who has tested negative on PCR so far. 

My symptoms were not usual&if it had been down to the nhs app I wouldn’t have been supposed to have a test.But I did; as my sugars went crazy,suddenly.Spiking.I had what felt like a head cold.Blocked ears,clearing my throat a lot.My voice went very manly! I booked a PCR&the morning of it I had a positive lateral flow&then that evening I got PINGED!So I kind of knew for certain before the pcr arrived in my inbox text message the next day. 
Since then,my symptoms have changed daily. 
No smell or taste(so odd!)but I can tell the difference between sweet&savoury&also I can sense chemicals like nail polish remover.Odd. 
Sneezing.Never sneezed so much &have to be so careful as trying not to do it anywhere near family-hard!!Although that symptom isn’t there today. 
No appetite,nothing.Which is positive in terms of my blood sugars. 
My sugars are back to normal. I am back to normal basal again&actually having a few lows so will do a basal reduction.Thank GOD for @dexcomuk 
Seeing my patterns on Dexcom clarity shows just how erratic my sugars were on the first 2 days.My time in range is now much better with no highs/ spikes. 
Tight chest. This has given me great moments of anxiety as I know that the days 7-10 are the most important for turning points with Covid,so I wait! 
Not sleeping-slight insomnia !The opposite to what it says I should feel! 
Painful biceps 
Itchy eye balls 
Light sensitive-ok inside,just can’t go in the garden! 
Headache-bad on one day but was manageable.
No cough.No temp. 

So all sounds terrible in a list but it hasn’t been.Honestly. I have thus far been so lucky.Everything mild. I have had full days playing with the girls& my husband here at home.He has been amazing&has given me space to sit &rest when I need to. 
Ask any qu’s!! Here to help, not scare!

I can’t believe I will have a 5 yr old tomorrow!

We spent a totally magical weekend celebrating Florence’s 5th birthday, complete with dry and sunny weather for her party- which had, at one stage, on the BBC been a 78% chance of rain! It was amazing seeing the children having so much fun. 

A real life fairy magically appeared from ‘nowhere’ (the first pic is the moment Florence met her) and she ran the whole show! She was utterly incredible and totally entrancing. She painted Florence’s face beautifully and knew all the names of the children by heart as soon as they arrived. True professional. Her name was Fairy Rose but she is available to book through ‘fairy Sarah Cheltenham’ if you google her. She doesn’t have social media. 

We booked a teepee bell tent which was perfect for stories and pass the parcel and Clemmie adored the music and dancing. She dropped her nap that day and partied on through with delight! 

I have set up a new account @theportersisters to share all family content going forward. It makes more sense and if you want to follow the girls and what we are up to then come on over! 

Clemmie had her first taste of real sugar with a fist full of cake, or 2…. 

I am about to make my grain free cream cake with a blackberry jam for Florence’s actual birthday tomorrow. I will share the recipe later. One cake I CAN have a slice of! Hooray!

I can’t believe I will have a 5 yr old tomorrow!

We spent a totally magical weekend celebrating Florence’s 5th birthday, complete with dry and sunny weather for her party- which had, at one stage, on the BBC been a 78% chance of rain! It was amazing seeing the children having so much fun. 

A real life fairy magically appeared from ‘nowhere’ (the first pic is the moment Florence met her) and she ran the whole show! She was utterly incredible and totally entrancing. She painted Florence’s face beautifully and knew all the names of the children by heart as soon as they arrived. True professional. We spent a totally magical weekend celebrating Florence’s 5th birthday, complete with dry and sunny weather for her party- which had, at one stage, on the BBC been a 78% chance of rain! It was amazing seeing the children having so much fun. 

A real life fairy magically appeared from ‘nowhere’ (the first pic is the moment Florence met her) and she ran the whole show! She was utterly incredible and totally entrancing. She painted Florence’s face beautifully and knew all the names of the children by heart as soon as they arrived. True professional. Some inspiration for you with the children! Or just a lower sugar/  carb snack / treat for yourself. Make some fruit kebabs, or slice watermelon / kiwi / melon / mango / peach etc. Pop on a stick, because everyone loves a stick. Easy to share them out and take to gatherings / have in the freezer. 

Pop in freezer until frozen. 

Mash some fruit (I used blackberries) in to Greek yoghurt (full fat or fat free, your choice. Add a little powdered sweetener or icing sugar (if you believe it needs sweetening). Yoghurt wise I use @fage_uk 0% ) add some sugar free sprinkles on top (@gooddeesmix ) and then dip your pops into the yogurt. Simple, refreshing and tasty. Should have shared this when the weather was hot- it’s pretty hit and miss here in Cheltenham! 

You could add some sprinkles / coconut / dark choc drops etc in to separate bowls and then you can have a little station for people to decorate them themselves.

Back doing what I love! 
After a few months off, today I ran a zoom cooking class with 7 wonderful people! It was a joy to be back in the kitchen and teaching low carb cooking. I find such delight in sharing recipes and a lifestyle that is such a huge and positive part of my life and health as a t1 diabetic.
Cooking a feast meant that once it was finished my family had a wonderful feast.

Today we made:

⭐️chocolate fudge courgette brownies
⭐️lamb koftas
⭐️cauliflower cheese squares
⭐️summer tomato salad
⭐️mint yoghurt dressing

As promised to the 280 of you who voted YES to this recipe on my Instagram stories. 

Low carb, grain free, gluten free, can be dairy free (phew, that’s a lot of ‘frees’), chocolate pancake swirls. Like the middle of a pain au chocolate. 
If you don’t want to make them as rolled up swirls then you can just make them as pancakes - method is as you would do normal pancakes. 

I made these for the girls and my husband this morning. Clemmie’s first taste of them and wowee did she LOVE THEM. ‘More, more, more, Mama, pweassssssee’.

Recipe

60g double cream (or coconut milk from a tin)
60g milk of choice (or water)
35g arrowroot powder (this is a key ingredient)
25g ground almonds or ground/milled  flax or other flour but not coconut flour.
1tsp sugar or sweetener
50g chocolate, chopped up. Your choice of %
2 large eggs
Coconut oil or other oil to grease a silicone baking sheet (recommended)

Instructions
Preheat oven to 180c (fan assisted)
Grease a silicone baking sheet and pop in a heavy based baking tray.
Place in oven for 5 minutes while you sort the batter.
Combine all ingredients to a batter. (If too loose, then add a little more ground flax or flour- you don’t want it all to slide off your baking sheet).
Carefully remove the baking sheet from the oven. Pour batter on it carefully.
Place in oven for 6 mins until firm and cooked

As promised to the 280 of you who voted YES to this recipe on my Instagram stories. 

Low carb, grain free, gluten free, can be dairy free (phew, that’s a lot of ‘frees’), chocolate pancake swirls. Like the middle of a pain au chocolate. 
If you don’t want to make them as rolled up swirls then you can just make them as pancakes - method is as you would do normal pancakes. 

I made these for the girls and my husband this morning. Clemmie’s first taste of them and wowee did she LOVE THEM. ‘More, more, more, Mama, pweassssssee’.

Recipe

60g double cream (or coconut milk from a tin)
60g milk of choice (or water)
35g arrowroot powder (this is a key ingredient)
25g ground almonds or ground/milled  flax or other flour but not coconut flour.
1tsp sugar or sweetener
50g chocolate, chopped up. Your choice of %
2 large eggs
Coconut oil or other oil to grease a silicone baking sheet (recommended)

Instructions
Preheat oven to 180c (fan assisted)
Grease a silicone baking sheet and pop in a heavy based baking tray.
Place in oven for 5 minutes while you sort the batter.
Combine all ingredients to a batter. (If too loose, then add a little more ground flax or flour- you don’t want it all to slide off your baking sheet).
Carefully remove the baking sheet from the oven. Pour batter on it carefully.
Place in oven for 6 mins until firm and cooked
