#AD: Who wants spaghetti? Try this roasted tomato pasta recipe featuring @BarillaUS chickpea spaghetti! I created this budget-friendly recipe for shoppers who want a filling meal that provides a good source of protein and an excellent source of fiber. ⁣
⁣
With more than 140 years of expertise, Barilla has created a delicious pasta with an always “al dente” texture made with just one simple ingredient - chickpeas! Here’s how you make it: ⁣
⁣
Ingredients⁣
⁣
1 box Barilla chickpea spaghetti⁣
1 carton organic cherry tomatoes, halved⁣
Plant-based parmesan cheese, to taste⁣
1 ½ cups organic marinara sauce⁣
1-2 organic garlic cloves, minced⁣
2 tablespoons organic cooking oil⁣
½ teaspoon Italian seasoning⁣
1 teaspoon organic dried oregano flakes⁣
Organic black pepper and sea salt, to taste⁣
Fresh organic basil *optional⁣
⁣
Instructions⁣
⁣
1. Preheat oven to 400F. Line a baking sheet with parchment paper or coat lightly with cooking oil.⁣
2. Combine cherry tomatoes, 1 tablespoon cooking oil, garlic, Italian seasoning, black pepper, and sea salt in a bowl. Coat evenly.⁣
3. Place cherry tomatoes on the baking sheet in a single layer, bake for 25 minutes. Remove, and let cool slightly.⁣
4. Meanwhile, bring a large pot of water to a boil, along with enough sea salt to flavor the water, and a splash of cooking oil to prevent the Barilla chickpea spaghetti from sticking. Cook until al dente, remove from pot, then strain.⁣
5. Return Barilla chickpea spaghetti to pot. Mix in marinara and roasted cherry tomatoes. Top with plant-based parmesan cheese and fresh basil, if desired. ⁣
