One of the things I decided earlier into the girls' softball season was the fact that I wasn't going to sacrifice meal time to games. I wanted to make sure my family got fresh cooked meals either before or after games. Sitting together for a meal after busy schedules has been a must for us. We get to hear what the girls have to say and what the parents get to say, and we also have family worship time. So, yes, it is A LOT of work, but I want my girls to remember that they got wholesome meals and not a constant serving of fast food or concessions. We do have it once a week but the whole time , the whole week gets really hard on our habits. I'm thankful for a variety of recipes and inspiration that the Lord gives. I know not everyone can do this but it's been a goal of mine. Here's a recipe I found in @177milkstreet magazine where I substituted rice noodles. It was so so good! This was a new #Vietnamese recipe for me. The kids enjoyed it but they were expecting Pad Thai ????.

I've been making Mediterranean food for a long time, but there are times I try to find quicker ways to finish the meal process. Shawarma in the oven is the easiest and least messy way to cook without resorting to traditional ways. I mixed 2lbs of ground beef with 3 tbsp shawarma seasoning blend, 2 minced onions and 6 minced garlic cloves, 1/3 cup chopped fresh parsley, 2 tsp salt. I then lined a baking sheet with foil and flattened the mixed ground beef evenly. I then created indentations , creating strips so that when it finished cooking, it would be easy to cut in strips. Place cooking sheet in a preheated oven at 375F. Cook for 15 min and remove excess oil. Finish cooking for another 5 minutes. My tabouli and hummus recipes are on my website.
