I absolutely love these pepper “nachos”! ?? So yummy, cheesy, and filling. Ingredients & recipe are in the image. Makes 2 servings.

I get a lot of Qs about why I follow & recommend a lower carb lifestyle. There’s no actual definition “low carb” so what I mean by it, is reducing total carbohydrates in the diet, if it helps the person feel better. I don’t mean keto, I don’t mean taking out complete food groups.

There are so many science backed benefits to following a lower carb way of eating, including:

?1. Reduced blood sugar and insulin levels:

Refined carbs tend to be low in fiber and are digested and absorbed quickly, leading to rapid spikes in blood sugar. When you eat a food that spikes blood sugar fast, it tends to lead to a crash in blood sugar a few hours later. High blood sugar & insulin levels over time increases the risk of type 2 diabetes, heart disease, and kidney damage. Reducing carbohydrates, especially refined carbohydrates and sugars, lowers both blood sugar and insulin levels.

?2. Automatic reduction in hunger:

The macronutrients protein and fat tend to keep a person fuller than carbohydrates. Therefore, it's easier to keep total calories in check.

?3. More abdominal fat loss:

When following a lower carb way of eating (vs. low fat), more body fat is lost from the abdominal area. Excess visceral fat is associated with inflammation and insulin resistance, which is related to increased risk of heart disease and Type 2 Diabetes.

?4. Lowered blood triglycerides, increased HDL cholesterol (the “good” kind) and lowered blood pressure:

Following a lower carb diet is associated with a dramatic reduction in blood triglycerides, increased HDL levels, and lowered blood pressure

1. Slice mini mozzarella balls (sometimes they’re called “pearls”) in halves

2. Mix mango salsa (I bought pre-made from Shoprite! But you could make your own by dicing 1 mango, 1/4 red onion, and 1/4 red pepper) with Mozz balls and red wine vinegar

3. Slice avocado in half, take out the pit

4. Fill avocado holes with salsa mixture, have any extra salsa on the side

5. Top with a dash of salt, and fresh cilantro to taste

- Give yourself 2-3 hours to complete The Great Vermont Corn Maze - so fun!
- Lots of hikes & swimming holes
- Rent a boat from Joe’s Pond
- Apple picking at Burtt’s - get the cider slushie!
- Take a sugar house (where they make maple syrup) tour - there are a lot! We went to Goodrich’s
- Get a drink & watch the sunset at Quechee Inn
- Walk among 100 sunflower varieties at Billings Farm
- Rent kayaks for $5/ hour through the Dartmouth canoe club
- Take a tour of the King Arthur Baking company
- We stayed at the Applegate Farms Carriage House in Cabot, VT! If you search for it in AirBNB it will come right up

PLACES TO EAT
- Red Barn: get the wings & food board
- Get a hot chocolate from Front Seat Coffee - cutest coffee shop!
- Get a unique burger & delish salad from Distillate. Also go to the downstairs bar for a drink.
