So I recently had the opportunity to take the Kilimanjaro Safaris Trek at Animal Kingdom while attending the #DisneyCreators event in Orlando. What a great ride! Welcome to how to make random bread 101. My name Jason, and I'll be your host. So I've had sourdough starter on the counter for a few weeks. Stacie snagged a 120 year old stain from San Fran for me to play with, so I've gotta cook. Now for those that don't know, when starter is held like that... Ie on the counter and ready to use...you have to feed it; daily. You end up with so much starter that you either have to bake daily or throw some away. So. What we have here is a sweet bread without recipe. Here is the recipe :). 1ish cups of water into kitchenaid with dough hook. Add two eggs, I want the dough a little sweet and rich (seriously.. This was how the bread was made..no recipe, throw crap in), like a cup of starter, 1 tsp instant yeast cause I was lazy and didn't wait for the sourdough starter feeding to fully kick in... Err... Where was I.. Oh yea. Then I added about 1/4 cup of sugar. Turn on the mixer and.. Well... Mix. Next add 4 cups of bread flour a bit at a time. Mix about 2 tsp of kosher salt into the flour. Realize that 4 cups is not enough flour and add a good 1/2 cup more. Dough should be pretty soft and wet, but workable. Mix everything for a few minutes. Now get rid of the hook, cover the dough, and let it rest 30ish minutes. Roll dough out into rectangle that will fit on a sheet tray length wise. Roll it like 3/4 inch thick. Grab the strudel topping that you didn't use the other day from the fridge and sprinkle all over dough. Roll dough up. Seal edge with a bit of Agua. Tuck the ends under. Cover and let rest like 2-3 hours. Slice top and bake at around 350 for 40ish minutes. If the bottom starts to overcook, double up the sheet trays (like stack em... It will insulate a bit). Eat and profit. This stuff has been living on my counter for the past month or so... My sourdough starter. Did you know that you can start your own starter with nothing but water and flour? That's right! Wild yeast is all over the place, and your flour is likely carrying some. You just add water, keep everything at room temperature, and feed the yeast fresh flour and water every day. Do that for two weeks and you will be rolling is sourdough starter. I made a little remoulade for dipping. It was the sourdough tempura that made me fry everything up. I was thinking about tempura batter for some reason and... Well it's just flour, cold water, and egg....and sourdough discard is just flour and water so.... I wondered... Could you make tempura with sourdough discard? Yes! Yes you can! And it is good too. I just loosened about 2 cups of discard with a little cold water and then added one beaten egg. It's important that you start with refrigerator cold discard though. Anyway... It came out nice and light... Crispy.... With a sourdough tang. It was a great way to use a little of the Pacific Cod that I just recieved from Sitka Salmon Shares. More bread, because that's what you do when you stay home thanks to Covid. Today's sourdough loaf....actually started last night. Inside is dark cocoa powder, sugar, and orange zest. The bread is "slightly" sweetened. I started with about 1.5 cups of starter (Sorry, nothing was measured), to which I added maybe 2/3 cup of water, 1/3rd-ish cup sugar, and one egg. I beat that together and then added about 1.5 tsp vanilla. To that went maybe 1.5 tsp salt and enough flour to make a sticky but manageable dough....so it sticks to the hands, but a dusting of flour allows for handling....maybe 3-4 cups flour. Mixed all that by hand until together and then cover and rest for 30 minutes. Come back and knead the dough a bit, then cover and let rise for like 4ish hours. Then roll dough out of a floured surface. Make a rectangle (you will roll it up to make it long). brush dough with melted butter, but leave 1/2 in bare along one of the long edges. Now mix cocoa with sugar and sprinkle it on generously. Throw on some random chocolate chips and a bunch of orange zest. Now roll it up, starting with the long edge that WAS coated with butter and cocoa. When you get to the other edge, brush with water and seal the dough, tucking the ends under. Put on a greased sheet tray (I used a silicon mat), lightly oil the top of the loaf with food release spray, and then cover the whole tray in plastic wrap. Let it sit overnight, or around 7-8 hours. Now cook it at 375ish for 30-40 minutes. It's done when the crust has browned and the loaf sounds hollow when thumped on the bottom.
