#sundayfunday ??? I’ve picked up @woolworths_au Fresh Magazine #dinnerideas and I told Hubby I’ll cook Dinner and he can take a day off. Tonight’s Dinner is Fish Béchamel cottage pie ??? It was very easy to follow and recommended. My family was so happy! #ingredients 1.2kg baby potatoes 2 carrots olive oil 80g plain flour 800ml low-fat milk 50g mature cheddar 150g baby spinach 165g raw prawns 340g mix of white fish and salmon 2 tsp English mustard green salad Method 1. Preheat the oven to 200°c. Scrub the potatoes and add to a large pan of boiling water, then cook for 15 minutes, or until cooked through. Meanwhile, scrub the carrots and slice very finely. 2. Add 3 tbs of olive oil to a large shallow casserole pan over a medium-low heat and stir in the flour. Cook for 1 minute, then gradually pour in the milk, stirring continuously, until you have a smooth sauce. Coarsely grate the cheese and stir it into the sauce, along with the carrots. Season to perfection, then simmer on a low heat for 5 minutes. 3. Drain the potatoes and leave to steam dry. Roughly chop the spinach and stir it through the cheese sauce. Remove the pan from the heat, then stir in the prawns, fish and mustard. 4. Mash the potatoes with 1 tbs of olive oil, a pinch of pepper and salt to taste, then spoon on top of the creamy fish filling. Bake for 30 minutes until golden and bubbling. Today’s lunch is Cheesy Egg and Bacon #frittata #bestrecipesau method below how to make it. My family love it so much and had seconds! Happy #cooking ! #Ingredients 6 eggs @australianeggs 1 cup milk @paulsprofessional 2 tbs butter, melted 1/4 cup spring onion, chopped 5 bacon rashers, chopped 1 cup cheese, grated #method Preheat oven to 180C. Saute bacon in a non-stick pan and drain excess oil. Beat eggs, milk and butter together and season with salt and pepper. Pour egg mixture into rectangular baking dish. Sprinkle bacon, cheese and spring onion evenly on top of egg mixture.
