As if on cue, my city has gone from soup to popsicle weather overnight. That’s not necessarily a bad thing, because it means I can start making popsicles again... like these Labneh and Tahini Popsicles with Sesame Brittle. Last week, I had made some til gud chikki (sesame and jaggery brittle), but before I could click a decent photo, the weather turned and inspiration struck. ???? These popsicles were created on an impulse, so I don’t have an exact recipe. I blended labneh (Greek yogurt would also work) with some tahini, honey, cardamom, vanilla and a pinch of sea salt. I crushed and added some of the sesame brittle to the mix and froze it in kulfi molds. The result were these deliciously nutty and creamy pops. Shot them last night and (like the winter) they’re almost all gone.
