“Cook it again and again until you master it” Repetition plays an important role at Hayato. They’re always looking to improve their craft, which means your next visit will be even better than your last! After summer season and autumn season, I was so lucky to come back again for winter season. My first photo features Seiko Gani Meshi (Female snow crab 香箱蟹) from Hyogo. Snow crabs are in season now, and it can only be harvested from November to the beginning of January in Japan. The female snow crab has sotoko eggs that are outside the body, uchiko eggs that are inside the body (orange part), crab miso (brown part), and crab meat. Seiko Gani Meshi is served in the crab shell. It looks and tastes like heaven. Chef Brandon uses dashi to cook the rice until the liquid is fully absorbed, and then adds sotoko, uchiko, crab miso and meat into the pot. The eggs and miso creates a layer of umami. Each spoonful is remarkably delicious and is the perfect comfort food that warms your body up in this chilly weather. We ordered the bread and butter, Horses caesar (⭐️), tagliarini with anchovies, butter and puntarella, cornish game hen with warm dandelion panzanella (⭐️) , Southern California cioppino with saffron rouille, cheeseburger and fries (⭐️). You cannot leave without trying their famous dessert, Sheep's milk cheesecake with grappa roasted pear ⭐️. They also offer a variety of cocktails and natural wines! Congratulations to owner-chef @_ki.kim for the opening of his first restaurant in Los Angeles! Prior to opening @kinn.la, Chef Ki trained at several Michelin-starred restaurants, @eatblanca , @jungsik_inc ,  @atomixnyc , and @elevenmadisonpark. I met chef Ki back in January 2021 at the pop-up shop in Sawtelle @naemo.la ,which offered beautiful Dosirak (refers to a packed meal in Korea) to go meal. With the same concept as Naemo, @kinn.la focuses on modern Korean Style dishes by using seasonal ingredients to create unconventional Korean flavors with fine dining techniques.
