If this is the future of fine-dining Chinese cuisine, we’re in very good hands. At @wingrestaurant_hk by @chefvickycheng , fine dining isn’t about excess — it’s about precision, patience, and deep respect for ingredients. I’m only highlighting a few of my personal favorites below — the full menu deserves far more attention than one post can capture. The meal begins with a series of super pretty appetizers — delicate, refined, and almost too beautiful to touch. Each bite is thoughtful and balanced, setting the tone for what’s to come. There’s the impossibly crispy Sea Cucumber Spring Roll — the sea cucumber braised until it reaches a texture almost like fatty pork — cut in half tableside and served in a fragrant ginger and scallion sauce. It’s rich, layered, and unexpectedly luxurious. The Alaskan King Crab with Crispy Cheung Fun was a standout. That first bite — a delicate crunch from the outer layer, followed by the soft, chewy texture of classic cheung fun. Rolled slightly thicker for more structure, more presence, more satisfaction. And the Baby Pigeon Smoked in Sugarcane? Possibly the best pigeon I’ve ever had. Roasted whole, releasing an incredible aroma as the lid was lifted. Gloves on. Hands only. The way it should be. And to end — the best seasonal fruit selection you could ever wish for, showcasing peak quality and natural sweetness. Even my parents approved of the entire meal and were so happy. ???? Calling it now: Corridor 109 might be LA’s next Michelin star. The aji toast alone is one of the best bites of 2026. An 11-seat chef’s counter in Melrose Hill by Brian Baik. This is your next dining destination. Ise Ebi | Spiny Lobster, Tartlet Raw California spiny lobster, incredibly fresh, paired with wasabi, finger lime, and finished with shiso oil. 2. Tai | Sea Bream, Ensui Uni Lean, delicate sea bream topped with soy gelée, myoga, and shiso flowers. Clean flavors with subtle depth. 3. Aji | Horse Mackerel, Toast Baik’s signature dish. Pintxos-inspired but executed with Japanese seafood technique, lightly salted and vinegared aji, red pepper aioli, and a touch of charred ginger paste. Playful, skillful, and incredibly balanced. Simply one of the best bites, I honestly wished I could eat more. 4. Ankimo | Monkfish Liver, Flounder Creamy ankimo paired with kombu-jime hirame, fine cucumber, and onion. Rich yet elegant, with beautiful texture contrast. 5. Hotate | Scallop, Clam Broth Raw Hokkaido scallop served in a clear clam broth, finished with kinome. Pure and deeply comforting. 6. Sawara | Spanish Mackerel, Yamaimo Charcoal-grilled Spanish mackerel set over mountain yam sauce. 7. Katsuo | Skipjack Tuna, Pesto Spaghetti Zuke-style katsuo with pesto spaghetti. Fresh ginger plays a key role here, cutting through the richness and lifting the entire dish. 8. Aka Amadai | Red Tilefish, Fish Broth Steamed red tilefish paired beautifully with a clean, aromatic fish broth. 9. Clam & Uni | Buri, Sushi Rice Risotto It served with clam and uni risotto, buri, and cucumber on the side, rich but balanced. 10. Wagyu | Oxtail Jus, Shiso Full-blood A4 Australian wagyu New York strip. Slightly chewy, deeply beefy, and incredibly satisfying. The oxtail jus and shiso take it to another level. 11. Dessert | Persimmon Sorbet Persimmon sorbet resting on sake jelly, with fresh persimmon on the side to mix in. Light, refreshing, and the perfect ending.
