MARSHMALLOW BAKED OATS

THIS ONE IS A MUST. I wanted to make a s’mores one .. but was lacking the graham crackers and chocolate ? so we made the most out of what we had and the result was better than I could’ve ever imagined ?? yesterday I spent the entire day on one problem for my CS class and am still slightly stuck on it ? this is going to be a LONGGGG week, but we’re starting afresh today and we’re going to make the most of this challenging week ?

Marshmallow Baked Oats
1/3 c oats blended to flour
1/2 tsp baking powder
1 tbsp vanilla protein powder
pinch salt
1/3 c soy milk 
1 tbsp yogurt 
small handful of marshmallow (tear to pieces!)

Blend/mix all ingredients except the marshmallow together. Add marshmallow overtop (tear into little bits so that it really melts down during baking! Bake 350F for 15 min. ENJOY

Tested out a new way of making overnight oats and it did not disappoint ? this is for those summer mornings when you need something refreshing, and want texture more akin to rice pudding ?

1/2 c oats
1 c water or nondairy milk
2 tbsp yogurt
1/2 - 1 tbsp maple syrup 
.
Microwave 1/2 c oats with 1 c liquid for 1 min. (It won’t be fully cooked but this’ll heat up the water just enough to let the oats start cooking. Let rest for 10 min or until the oats starts cooling off and then mix in the yogurt and maple syrup. Chill in fridge overnight and enjoy with apples, mixed seeds, and PB in the morning. ❤️

MINT OREO OAT BAKE

Okay your Tuesday just got a lot better trust me ? Yesterday was a whirlwind of a day bc vaccine appts registration opened up to everyone 16 and over where I’m at so you can imagine how much traffic the vaccine registration sites got ? While waiting was frustrating in the moment, it’s also reassuring in a sense to know that so many of us are committed to getting vaccinated and will be (hopefully) returning to some sort of new normal soon ❤️

Mint oreo baked oats
1/3 c oats
1 tbsp jet black cocoa (I used @hiitnutrition )
1/2 tsp baking powder
1/2 tbsp chocolate protein powder 
pinch salt
1/3 c soy milk
1 tbsp yogurt
1.5 tbsp maple syrup
1/4 tsp peppermint extract optional 
oreos (as much as the heart desires :P)

Blend all ingredients (except oreo) together, crumble in an oreo, and top with another! Bake 350F for 15 min. Top with a splash of milk. 
ENJOY
