My first day in Bangkok unfolded through food. At Hiori, tucked inside the serenity of Aman Nai Lert, chef Nat Nisarut transformed teppanyaki into something quietly poetic — ingredient-driven dishes shaped by balance, contrast and texture, prepared with an almost meditative precision.
