Sooo, we have ~4 weeks to turn this parking lot into an outdoor raw bar ???? We’re designing and building everything ourselves, from the A Frames to the neon signs. NOT STRESSED AT ALL. It was a big week- the containers that will serve as our shucking and beverage stations have been dropped and sweet sweet turf has been laid, perfect for spilling cocktail sauce and discarding zyns onto. We’ve done it before at our oyster farm in Duxbury and in Maine @portlandoystershop so, as long as the rain holds off, it should be simple right? ???? We have a LONG way to go in a SHORT amount of time. Stay tuned for more updates!

WE’RE OPENING A RAW BAR! IN THE SEAPORT! In a few weeks, we’re bringing the magic of our Duxbury Raw Bar to Boston’s Seaport as a seasonal outdoor experience!! Today we’re making Grilled Oysters with Sichuan Chili Crisp and Seaweed Butter! This recipe is all about @islandcreekoysters Oysters and @flybyjing Sichuan Chili Crisp – two good things that are made even better when roasted together over a hot grill. Ingredients -12 Island Creek Oysters -1/2 cup Fly By Jing Sichuan Chili Crisp -1/2 cup of organic smoked kelp -1/2 a container organic kelp granules -1/2 cup of Maldon sea salt -1 lime -Optional garnishes: scallions, cilantro Process Blend smoked kelp, kelp granules until fine. Then mix in Maldon sea salt until fully incorporated. Whip 1/4 cup kelp mixture into 1/2 pound of butter until evenly combined. Clean and shuck your oysters Add a teaspoon of the compound butter to each oyster, followed by a spoonful of chili crisp. Now it’s time to sizzle – place the oysters on a hot grill and cook until the liquor just starts to bubble. This should only take a few short minutes. Once poached through, remove the oysters from the grill. Top with thinly sliced scallions, cilantro, and a squeeze of lime. Serve warm and enjoy!
