One of my favorite quinoa salads that’s easy to make ahead for your busier weeks.

What you need:
1 cup white quinoa
1/2 cup pomegranite seeds
1 cup arugula, chopped
1 cup chickpeas

Just mix together olive oil, lemon juice, salt & pepper for the dressing.
