Butter Bean Salad with Herby Vinaigrette over whipped vegan feta ???????? using @bonafurtuna Everyday Extra Virgin Olive Oil! ✨ this salad makes going back to school or work exciting if you have a delicious lunch to look forward to!! Ingredients: 2 15 oz. cans of butter beans, drained and rinsed 1 celery stalk, thinly sliced 1/3 cup red onion, thinly sliced 1/4 cup Kalamata olives, pitted and chopped 1/2 cup cherry tomatoes, halved (optional) IGreen Herby Vinaigrette: Small handful fresh parsley Small handful fresh basil Juice of 1 lemon 1/3 cup @bonafurtuna Everyday extra-virgin olive oil 1 tsp maple syrup Sea salt, to taste Whipped Vegan Feta Dip: 1 cup vegan feta 2 tbsp @bonafurtuna everyday extra-virgin olive oil Juice of 1/2 lemon Instructions: Whip the feta: Blend vegan feta, olive oil, and lemon juice in a food processor until creamy. Blend parsley, basil, lemon juice, olive oil, maple syrup, and salt until smooth. Combine butter beans, celery, red onion, olives, and tomatoes in a large bowl. Ingredients: 2 15 oz. cans white beans (great northern, cannellini or butter beans) 1 celery stalk, chopped 1/3 cup red onion, thinly sliced 1 15 oz can artichokes, rinsed and chopped 1/4 cup Kalamata olives, pitted & chopped Sautéed Tomatoes: 1 pint cherry tomatoes, halved 1 garlic clove ½ tsp rosemary, minced 2 tsp @bonafurtuna everyday extra virgin olive oil 1 tsp @bonafurtuna aged balsamic Dressing: 1 tbsp @bonafurtuna everyday extra virgin olive oil 1 tbsp @bonafurtuna aged balsamic Juice of 1 lemon 2 tbsp chopped parsley, ½ tsp salt, 1 tsp maple or honey Oregano & chili flakes to taste Instructions: Toss the beans, celery, onion, artichokes, and olives in a bowl.
