A fresh take on Charcuterie! I love this concept of a salad board. It gives your guests the options to choose their toppings! A great idea for a ladies luncheon or a fresh spin on a weeknight dinner! * handful of asparagus spears, trimmed and cooked * 3 heads baby romaine lettuce, halved or 1 romaine heart, cut up * 12 oz. grilled chicken breast, sliced * 6 hard-boiled eggs, halved or quartered * 2 medium avoados, sliced * 8 oz. hard cheese, such as white cheddar or parmesan, broken into chunks * 1 small red onion, sliced * 12 small radishes, halved or quartered * 12 slices of bacon, cooked crisp and crumbled * Homemade Creamy Buttermilk Ranch Dressing, Homemade Creamy Buttermilk Ranch : Dressing recipe In a bowl, whisk together 1/2 cup each buttermilk and mayonnaise Add 1 Tbsp. each chopped fresh parsley and chopped fresh chives Add 1/4 tsp. each onion powder, dry mustard, salt and black pepper Use 1 clove of garlic minced Mix all together

Our Clemson University graduate: 2nd Lieutenant Madeline Ariana Medica. I could go on and on about how proud I am of this young lady. If you know her, then you truly know how unique and special she is. She has accomplished so much in life thus far and she has prepared herself exceptionally well for the future. I have been trying to articulate how I feel about her graduating from college this week -it’s not so much she is done with college. It’s more so that she is leaving Clemson University as a student. Dropping my first born off here four years ago I was inconsolable. I was not ready for her to leave the nest. Yet I didn’t know at that time that Clemson would do a much better job talking care of her four these past four years more than I ever could. Clemson University is such a special place. Hard to describe but easy to feel there is just something “in these hills”. As Robert said yesterday-as much as he loves Boulder, he wish it “felt like this”. Clemson and all that it embodies equates to a warm hug deeply committed to its traditions and student body. If I took anything away this week is that although Madeline‘s journey has a student has come to an end. Clemson will always be home and will always welcome her with open arms. GO TIGERS!!!!!!

Fried Goat Cheese Balls with Drizzled Honey! These little puffs of delight are a crowd pleaser for Super Bowl Sunday *  8 oz log of fresh goat cheese * ½ cup all-purpose flour * 2 large eggs room temperature, beaten * ¾ cup panko breadcrumbs * Flaky sea salt * Honey * Canola or vegetable oil * Slice the goat cheese log into equal pieces.  Roll each piece of goat cheese into a small, round ball. It helps to wear disposable kitchen gloves while doing this to keep the them neat. * Place flour in a small mixing bowl, then drop the goat cheese balls into the flour and toss to thoroughly coat. Transfer goat cheese balls to a mixing bowl with beaten eggs and cover on all sides. * Carefully transfer goat cheese to a mixing bowl with panko breadcrumbs, allowing all excess egg to drip off before placing them in the breadcrumbs. Gently roll around to evenly coat on all sides with panko. * Freeze for 20 minutes! Do not skip this step or the goat cheese balls will fall apart in the oil! * Heat canola or vegetable oil in a small frying pan. When hot, carefully lower 4 or 5 goat cheese balls into the oil. Fry until a light golden brown on all sides. * Carefully lift out the fried goat cheese and transfer to a paper towel lined cooling rack. Immediately sprinkle with about ½ teaspoon of flaky sea salt. * Transfer goat cheese balls to a serving tray. Drizzle with about 2 teaspoons of honey-although you are welcome to use more! * Serve immediately or at room temperature.

Three times a charm. We have been in the TN real estate game for five years and finally with our third purchase we might actually lay our heads down. We could write a book on the trials and tribulations but also the perservence patience hard work and a little luck that has brought us to this point. We are so excited to give this 1815 Tennessee log cabin a little TLC without compromising the charm and beauty she already possesses. A huge shout out to our wonderful real estate agent @shawnna.simpson.team (and now dear friend) who we happened to meet by chance by calling into a real estate office over six years ago.
