Al Fresco dining last night in our communal back yard we share with 11 other flats in our building block.
.
We inherited a Weber BBQ from @highlowstudio.mark cousin (they upgraded to a green egg) so we decided to chain it to the bike shed out back and write a note to the neighbours they are more than welcome to use and share it with us.
.
Our great friends from @furanxo_e8 came over and we grilled up some salmon and amazing Iberico pork, did you know that it’s not just slithers of cured ham but these acorn fed beasts are delicious roasted and grilled as well??? It was a revelation and we will be eating it again as Furanxo has it in stock for BBQ season! .
Here we finished off the evening with some pineapple, lime & tequila marmalade trifles, which honestly made my heart sing!

There’s gonna be a heat wave next week so today is a great day to make jam... cause making jam in the heat is, well, ‘jam hot!’
.
Today there’s still a little cool in the air so I’ll be macerating these lush peaches overnight with sugar and a little mint too, then finish it off tomorrow while it’s not 30degrees.
.
You can see if you swipe across I chop my fruit up quite small, about 1cm cubes, where other recipes might tell you to cut chunkier.
I do this as the longer you cook your fruit for the more it turns into fruit sugar- chopping them small means less cooking time as they will break down quicker- meaning less sugar content in your jam.
.
If you like big chunks of fruit through your jam then hold some larger chunks back and add them later in the cooking time so they don’t break down.
.
Jamming tip for today! Happy jamming guys.

Named after the city of Newton, Massachusetts (unfortunately not after the preserver Kylee Newton), I thought it apt to make some for you with this seasons Fig Jam.

To buy these delights (incredibly tasty morsels are a half cake half biscuit (spiced with orange and ginger) filled with my Fig & Cointreau jam!

For me this is the perfect scone.
.
So over the past week I’ve been working my scone game- trying to recreate my Nan’s scones. 
.
It was the memorial of her passing last Friday, she lived to the ripe old age of 91 and memories of her fill me with joy.
.
She had 8 children so therefore there’s a army of us grandchildren (I think about 23-25 of us, who can keep count) and she gave us all her special attention- I think us all thinking we were her favourite.
.
We would flock to get her scones, every Sunday when we came to visit, all at different times and she would always whip some up in no time at all. Sometimes plain, sometimes with cheese. 
.
Nan’s were the best, they weren’t precise, high tea, perfectly formed, scones- no because those scones are never very tasty, and the amount of dry, very dry scones I have eaten in the U.K is countless!
.
Nan’s were light and fluffy and misshapen, just like these, and they tasted amazing.
.
After much research (messaging Auntie Cher what the magic was) and many days of testing and channelling Nanna May) l did it! And I couldn’t be more delighted. 
.
We never had the jam/cream, cream/jam debate- it was always just butter and jam, none of the fuss, just damn tasty scones made from 4 ingredients- flour, butter, baking powder and milk!
