It’s OCTOBER! ???? Correct me if I’m wrong but truly one of the greatest feelings in the world is a coolish fall weekend with windows open, hoodies on, football on TV, and chili on the stove. And if you don’t live in a fall place I’m so sorry and I’m sending you all my thoughts and prayers. ????

This classic Sunday Chili is the standard chili recipe at our house - it’s so good on the spot, straight off the stove (or Instant Pot) with sour cream and chips and all the delicious toppings, but it’s also so perfect for revisiting throughout the week as a chili casserole with polenta or cornbread, a little taco or quesadilla booster, and/or chili cheese fries. ????????

Those teeny tiny lentils cook up in ten minutes flat and the big flavor + loads of veggies in here make it such a wholesome comfort food meal, and even better as leftovers, if that’s possible. ???? Dipped and dunked with socca for me, but bread and flatbread and crackers and whatever else you like - any and all will make you happy.
