Chances are your favourite local cafe is using a scale - weighing the amount of coffee & water used to brew makes a night-and-day difference in the quality and consistency of your brewing. ⁠
⁠
Not only that - knowing how much coffee you need to brew your favourite cup will greatly reduce the amount of wastage in your brewing process. ⁠
⁠
Get your hands on a scale, ideally with one decimal place, to make your home coffee like the pros. Then track how much coffee & water you're using to make your cup. Start with the SCA (Specialty Coffee Association recommended) 1:15 ratio of coffee to water and then adjust from there to suit your taste. ⁠

On this farm we visited in Guatemala, avocado trees loom over the coffee shrubs. (You can see that much of the native ground-cover is allowed to flourish as well.) This provides myriad benefits:⁠⁠
- shade for the coffee trees⁠⁠
- habitat for birds, which keep insect populations under control⁠⁠
- reduced need for pesticide use⁠⁠
- second source of income for the farmer⁠⁠
- increased biodiversity⁠⁠
- reduced soil erosion⁠⁠

Coffee filters fall into two major categories - paper, or metal.⁠⁠
⁠⁠
FYI - there is, in fact, a difference between the two.⁠⁠
⁠⁠
Brewing with paper filters will give you greater clarity of flavours, but will absorb a lot of the oils that give the coffee body and richness in the cup. Brewing with metal filters will give you far greater richness in the cup, while slightly muting some of the more delicate notes and articulation.⁠⁠

Using a reusable metal filter is the waste-free and sustainable way to go. While paper is great for the reasons noted above - the fabrication and bleaching process are still fairly resource and waste intensive.⁠⁠

The good news is - whether you have an Aeropress, V60, Chemex, or another favourite brewer - there is a myriad of reusable metal filter options on the market! Some of our favourites include the line of reusable alternatives by @ablebrewing . Tanzania Zanzibar Peaberry is a community blend from high-altitude estates in Southern Tanzania (Lunji, Utengule and Kanji Lanji Estates) and Northern Tanzania (Mondul, Burka, Ngila and Lyamungu Estates).⁠⁠
⁠⁠
The Southern Estates are located in Mbozi and Mbeya, in the southern highlands of Tanzania. Although total production is usually less than 500 metric tons, the coffee from Utengule, Lunji and Kanji Lalji estates has a very good reputation. The Utengule coffee estate is a traditional, well-managed East African Coffee farm that produces an exquisite Arabica coffee. There is a large variety of rare trees and flowers growing on the farm as well as several rivers. By walking through the 500 acre coffee estate you can explore how coffee is being grown, harvested, and processed.⁠⁠
