i love tamales. both the delta version and the traditional version found in mexican cuisine. this is neither. 

this tamale pie is in my book and i think it’s a fun and playful riff on the traditional tamale. regardless of your geographic favorite, i think it satisfies. 

crust: masa, cornmeal, lard, stock...
filling: pork, green onions, spices, tomatoes, cilantro...

i drove 30 min each way to pick up these first of season local strawberries. i’d do it again and probably will. 

here, barely cored, quartered, dressed with powdered sugar and lemon juice. 

separately, same treatment, then bag at about 50% pressure and steam or circulate. cool and strain for some delicious strawberry nectar. 

love this time of year.

one of these days i’ll have a smoker again. until then, these baby back ribs cooked low in the oven (200F) will more than suffice. 

spiced with those spices in stories (fennel, black pepper, coriander and a bit of oregano) and then glazed to finish. 

the glaze is a basic pepper jelly but made with calabrian chilies and a lot of acid. lemon juice and citric. 

very solid.

i know, i know. i use country ham furikake on everything. but i really like it and it does make most things taste better and you CAN put it on everything if you want. so, to that end here’s some halibut from a couple nights ago. it was so fresh and clean i only added a couple things. 

halibut cooked at 200 F
aforementioned furikake 
lemon juice and good olive oil

i never seem to tire of trying to make a better roast chicken. this is the @barbutonyc cookbook version and it’s as good as advertised. i’m not big on following recipes in my personal life (restos and writing cookbooks are another story) but having enjoyed this chicken a few times in the restaurant i couldn’t not try it out. salsa verde also makes everything better.

not enough space here to get into what makes it the best ever, but look it up if you’re into that sort of thing. you should be into that sort of thing. 

this is not it. 

BUT, this a good one and when strawberry season rolls around i always crave it. 

this is @ralstonfamilyfarms rice with strawberries from LA (not los angeles), my herbs and some very good balsamic.

i wish i had a grill, but sadly i don’t. pan roasted in cast iron did quite nicely though. herbs of course now that i am a gardener lol. 

this was the first ar beef that really caught my eye. it was a nice cut (in stories before cooking) and had some marbling. it did not disappoint. It was quite tender, marbled but did not feel overly corn fed and was all around quite good. i’ll research more about them and report back. at this point I only have a phone number.
