It’s my 26th birthday! ? This week has been very mixed for me I won’t lie. Freddie would have turned 20 on Monday and this time of year was always special with both of our birthdays coming together. On the other hand, development started on @elliotjanks and my new business @flairboxco, which is the culmination of 7 months of work so far and marks the start of a big new chapter in my life! 600g Chicken Breast (£3.60)
400g Frozen Green Beans (34p)
200g Frozen Peas (13p)
30g Fresh Coriander (39p)
600g Singapore Noodles (£2.50)
3 Tbsp Thai Green Curry Paste (45p)
3 Tbsp Sesame Oil (18p) —————————————————————— RECIPE

You’ll need a saucepan for the veg, microwave or saucepan for the noodles and a frying pan for the chicken. Boil the kettle with enough water for all of your veg.

1. Chop up your chicken and try to add your Thai green paste evenly for an hour or so before cooking. Finely chop your coriander.
2. On a medium to high heat with a splash of sesame oil, pan fry your chicken breast for 7 minutes. Flip the pieces regularly to cook evenly.
3. Immediately put your green beans on a high heat for 4 minutes. Drain with cold water to cool.
4. Pop your noodles in the microwave for three minutes. Immediately boil your peas for a further 2 minutes before draining under cold water.
5. Take everything off the heat, mix your noodles, coriander, green beans and peas with a splash of sesame oil.
6. Add your salad to bowls, with the chicken on top and enjoy!

3. Immediately pop the pasta on to boil for 10 minutes.
4. In the meantime, in a frying pan, heat the oil over medium heat. Add the finely chopped onions, garlic, and thyme. Add a pinch of salt & pepper and cook for 3-4 minutes until onions have softened. 
5. Immediately heat butter in a pan over medium heat, add flour and whisk until smooth. Gradually pour in the infused milk and whisk until smooth. 
6. Drain the pasta then add the onions and cooked pasta, followed by the cheese and crushed Wotsits. Stir to combine.
7. Pour into baking dish and sprinkle with breadcrumbs.
8. Bake at 180ºC for 15 minutes until golden and bubbling.
9. Remove from oven and sprinkle with Wotsits mixture. ENJOY!

Did you know that 97% of us wake up feeling tired EVERY DAY. A lack of sleep leads to stress and anxiety and stress and anxiety lead to a lack of sleep! It’s a vicious cycle that’s very hard to break. For me, exercise is a HUGE factor in helping me get a good night’s sleep. Not only does it expel energy, but it also releases positive endorphins that mean when I lie down to go to sleep, my brain isn’t in anxiety and stress mode, but relaxed and sleepy mode. Working with @aveenouk as a #WellnessPioneer, I’ve brought together 7 more top tips, some of them are obvious, some not, but they all help;

1. Get 30 minutes of daylight in the morning (this trains your body clock, so it will learn when sleep time and waking up time are).
2. Stop drinking caffeine at midday.
3. Try to exercise before 2 pm (then you benefit from the positive endorphins without the adrenalin before bed).
4. If you fancy a drink, have it early in the evening, 6pm or so, to stop it affecting your sleep.
5. Avoid eating after 8pm.
6. Set your phone aside and stop using it at least 30 minutes before bed.
7. Make your bedroom cool and dark.

Slut’s Spaghetti with Chorizo made with ZERO PERISHABLE INGREDIENTS for only 60p!! ??? Click Save and get ready for a treat. Firstly, taking guesses as to why I had to use this Candele Lunghe pasta?? Yep that’s right, hoarders took all the pasta so I ended up finally finding this in TK Maxx of all places (also would not recommend, needed an industrial sized pot to cook it) ? Spaghetti puttanesca literally translates as slut’s spaghetti because they wouldn’t have the time or money to go to market for fresh ingredients to cook with - so they were happy to use store cupboard ingredients from jars and tins. Do you see where I’m going with this...? It’s a PERFECT dish to throw together with non perishable goods (you can use dried basil too), very fitting given the world we are living in right now. Whatever the reason for the name, it’s a no frills, wholesome and delicious bowl of spaghetti. Buon Appetito! ? #LessThan2 —————————————————————— Ingredients - Serves 4

400g Spaghetti (18p)
50g Chorizo (50p)
1 tbsp dried basil (15p)
1 Can Chopped Tomatoes (400g) (28p)
4 Cloves Garlic (10p)
150g Pitted & Chopped Black Olives (Drained) (75p)
2 Tbsp Olive Oil (6p)
2 Tbsp Capers (24p)
1 Tbsp Chilli Flakes (to taste) (15p)
Salt & Pepper —————————————————————— Recipe

You’ll need a large frying pan or saucepan. Pre-Boil your water in the kettle and get it boiling in a saucepan for the pasta. 
1. Finely chop your garlic and dice your chorizo. 
2. Heat one tbsp olive oil in the frying pan on a medium to high heat. Add your chorizo and garlic for a minute, add your chilli flakes for a further minute. 
3. Add a few pinches of salt to your boiling water then add the pasta, cook for 10 minutes, stir regularly to stop it sticking.
4. Add the chopped tomatoes, olives and capers and lower the heat to medium. Cook for 5 minutes, add your basil, then cook for a further 5.
5. Just before you drain the pasta, add a few tbsp of the pasta water to your sauce. Drain the pasta, then add it to your sauce and cook for a minute or so to thoroughly mix.
6. Serve it up and enjoy. Buon Appetito!

800g chickpeas (80p)
330g cherry tomatoes (90p)

2. Switch the oven to the grill on a medium/high setting. Add the kale to the baking dish and toss gently. Pop under the grill for 3-4 mins or until the kale is slightly toasted. 
3. Stick your pittas in the toaster for 2-3 minutes until toasted but not crispy. 
4. In the mean time, top traybake with pesto and feta then scatter with the basil and pomegranate seeds.

3 DAYS TO GO. Give this a read if you’ve struggled over the last two weeks. I hit rock bottom about a week ago. Just like every other self employed person up and down the country, I faced the stark reality that my business suddenly has little to no income for the foreseeable future. My initial response was panic, how am I going to pay my rent, bills and everything else that costs money? I felt very anxious and insecure about my future, my life choices up until now and just about anything I could think of!

My next thought was how this is going to impact EVERYONE. Everyone will be stuck inside, worrying about work, family and what the future holds. At least I’m used to working from home, having my own routine and the associated ups and downs. 
According to Desmond Tutu; “A time of crisis is not just a time of anxiety and worry. It gives a chance, an opportunity, to choose well or to choose badly” 
After a couple of days thinking and a chance to put everything into perspective, my thoughts shifted to what next? What can I do to help both myself and the incredible, supportive and kind people that follow me on here - the privilege of having this community is never lost on me. I already create home workouts and recipes that so many of you enjoy, why not create a plan that gives people a healthy routine, video workouts so that I can encourage you through them and stacks of healthy, delicious recipes too. I’ve wanted to do something similar for a couple of years and as they say - no time like the present. 
Nathalie and I spent the next week working non-stop to design, film, edit, test and re-test a month of workouts and recipes. We’ve got a couple of days to go but on Sunday we will launch www.thehomefitnessplan.com. The plans will be half price for the first month (£6.99 down from £14 - less than a netflix subscription). They’ll have a month of video workouts - 4 workouts a week, one recovery and core day ZERO equipment required - 45 recipe & snack ideas and stacks more tips.
