Toronto has been guesstimating the opening date of Badiali’s second home & we dug up a recent liquor license app for 581 Markham St. – suggesting ovens will fire up much sooner than anticipated! In our exclusive with co-owner & world-ranked pizzaiolo Ryan Baddeley, he dished on how the new space goes beyond a slice shop. From European-inspired interiors to a major seating upgrade, here’s what’s coming! Q: What can you tell us about the new location? A: We’re very excited. It takes inspiration from old European cafes & restaurants, with lots of beautiful tiling & wood accents. It will be the same concept as our Dovercourt location but will have more indoor & outdoor seating. Q: How do you think the pizza scene has changed in Toronto since you opened? A: I think we’ve influenced a few great shops to open & serve great slices. It was definitely something lacking in the city, and I think it has become more accessible in many neighbourhoods. Q: What’s your favourite Badiali slice or pie? A: I’m a classics guy. I love a simple margherita. When it’s done right, the balance and juiciness of the cheese and sauce is so satisfying. We also have a winter special, the Norcina, which is a creamy white pie with sausage & mushroom that’s high on umami – and addicting. Q: What has been your proudest moment? A: It’s tough to choose, especially with our beautiful upcoming space, but probably our collab with Miss Vickie’s on the vodka pizza flavour. Beyond serving great pizza, this was never something I ever could have dreamed of. Q: Outside of Badiali, what are your favourite pizza spots in Toronto? A: I love Bar Sugo & think Terroni still makes a great pizza. For a slice, I recently tried Nice Slice, which was great. Q: Pro or con pineapple on pizza? A: Definitely pro. Sometimes it’s what you want & that’s okay. It doesn’t have to be more than that. Q: Best soda with pizza & why? A: Hands down, Brio.
