When @muchlovegrill and I sat down to plan this weeks recipe for “The Meating”, we knew three things to be absolute FACT:

1️⃣ We’re making Tri-Tip Tacos. 
2️⃣ We’re smoking it then searing the shit out of it over some open coals.
3️⃣ We’re going to bathe in homemade pickled onions. 

Jenson’s made them before and promised me that he’d make um’ slap. 

Jenson didn’t play. He brought it. These things were absolutely banging and a MAJOR KEY to how these tacos turned out. The Paint Lick Panther aka @brandonlilly3 had a few finger fulls and confirmed they were his “truest addiction”. We believe him.

HOMEMADE PICKLED ONIONS THAT SLAP

Ingredients: (All Approximates. You’re the boss.)
• 1 red onion 
• 1 cup of apple cider vinegar
• 2 teaspoons of salt (sub for Fire Forged Sea Salt for some salty heat!)
• 2 teaspoons of sugar (or honey)
• 2 cloves of garlic

Thinly slice the red onion and place into a container (mason jar). Put vinegar, salt, sugar, and garlic into a small pot on high heat. Once it boils, pour it over the onions and seal the container. Let it come to room temperature then put in the fridge. They’re good for a few weeks!

Quit playing games. Rip up some onions and make some tacos. ??? then, thank @muchlovegrill .

This recipe was a hail mary by @MuchLoveBBQ to prep a QUICK and EASY side dish to go with some incredible pork belly burnt ends and smoked ribs.

We needed it to be something that would fill a lot of plates but taste amazing enough to not bring down the overall quality and experience of the meal.

Now, I love coleslaw. I've had good slaw and bad slaw. But, I've never had Pineapple Margarita slaw. Deep in the pocket, we decided to try it and it was a GRAND SLAM. 

Since our 'Spring Fling' event, I've personally made this dish 3 more times. Try it for yourself -- easy and incredible. 

INGREDIENTS
?Large Catering Tin or Large Bowl
?3-4 bags of store bought sliced cabbage / coleslaw mix
?Large bottle store bought cole slaw dressing
?Jar of Tacticalories Grilled Pineapple Margarita Salsa
?Salt

DIRECTIONS

This could not be easier. In a large bowl or catering tin, mix the cole slaw dressing into the sliced cabbage / coleslaw mix. Once it is well mixed, top with 1/3 - 2/3 of a jar of Tacticalories Grilled Pineapple Margarita Salsa. Mix well. We preferred a pinch of fine salt added to the top to balance the sweetness. That's it - don't complicate it. But, trust us. The flavor is on another planet with this mix. Only bring this to parties you want to be invited to again next year, because you're going to be everyone's best friend. 10/10

⚓️ Lime
⚓️ Rude Boy Jamaican Jerk Rub
⚓️ LUSCA Caribbean Lime Serrano Hot Sauce

For this recipe, we used fresh cleaned shrimp. In a small bowl, we mixed 1 tablespoon of olive oil, 1 tablespoon of LUSCA, the juice of a 1/2 of a Lime, and a few tablespoons of RUDE BOY seasoning. The goal is to make a thick paste like shown in our photos. Add more LUSCA hot sauce if you'd like to add extra heat! Continue adding oil if the mix is too thick, add seasoning if the mix is too thin.

Allow the mix to set up for 5-10 minutes. Toss the shrimp in this mix, coating well.

For this recipe, we used fresh cleaned shrimp. In a small bowl, we mixed 1 tablespoon of olive oil, 1 tablespoon of LUSCA, the juice of a 1/2 of a Lime, and a few tablespoons of RUDE BOY seasoning. The goal is to make a thick paste like shown in our photos. Add more LUSCA hot sauce if you'd like to add extra heat! Continue adding oil if the mix is too thick, add seasoning if the mix is too thin.

Allow the mix to set up for 5-10 minutes. Toss the shrimp in this mix, coating well.
