Roasted tomato soup w/ garlic, almond & rosemary croutons. Delicious end of summer recipe! Soup: 800g ripe juicy tomatoes 2/3 large red peppers 6 chunky garlic cloves 2 white onions 3 tbsp Herbes de Provence 1 sprigs fresh rosemary 3 sprigs fresh thyme 600ml broth/ stock of choice salt & black pepper extra virgin olive oil fresh basil (for garnish) Croutons: 150g bread 1 whole garlic bulb or 1 tbsp garlic powder 30g crushed almonds 1 sprig fresh rosemary salt & black pepper extra virgin olive oil Method: 1. Place whole garlic clove into a 200c oven for 45 minutes. 2. Meanwhile chop tomatoes & peppers. Season with salt, black pepper, fresh thyme & rosemary (stems removed). Drizzle over olive oil. Place into oven and roast for 30 minutes. 3. Sweat onions and garlic in a large pot. Add in salt, black pepper & Herbes de Provence. Remove roasted tomatoes and peppers and place into the pot with broth/stock. Reduce heat and cook for 10 minutes. Blitz soup until you reach your desired consistency. 4. For the croutons combine roasted garlic, olive oil, crushed almonds, chopped rosemary & salt. Roast for 10 minutes until golden. 5. Serve soup & croutons. Top with fresh basil.

LENTIL, CHICKPEA & SWEET POTATO CURRY (serves 3-4) 200g cooked chickpeas 200g cooked beluga or puy lentils 1 medium sweet potato 1 red pepper 30g coriander 1 chilli 1 cup water 400ml coconut milk 2 tbsp. tomato paste 1 tbsp. cumin seeds 1/2 tsp. fennel seeds 1 tsp. nigella seeds 1 tbsp. curry powder 1 tsp. garam masala Sea salt and black pepper Drizzle oil in a pan on a low - medium heat. Sweat onions, garlic, ginger & chill. Place in cumin, fennel & nigella seeds and stir. Add in tomato paste, coconut, curry powder, garam masala, salt & pepper. Cook for a few minutes and place in cooked lentils, chickpeas, sweet potato, peppers, thyme & water. Cover pan, reduce heat and cook for 25 minutes, stirring occasionally. Finish with fresh coriander. Serve.
