AKI 秋 Afternoon Tea at The Fullerton Hotel Singapore x Chef Makoto Arami of AMI Patisserie • I don’t usually go for afternoon tea, but when I heard about this collaboration with @makoto_ami @amipatisseriesg , I knew I had to. Having always enjoyed his pastries, it was a lovely opportunity to experience his creations once again — this time inspired by aki, the Japanese term for autumn. Presented at The Courtyard, the afternoon tea blends European and Japanese influences, highlighting premium ingredients from land and sea. • It starts with the Sansho Miso Yaki Nasu Madeleine, followed by savoury bites like the Burrata Cheese & Parma Ham Sando, Smoked Salmon Tarte, Tomato Tartelette, and the indulgent AMI Signature Caviar Choux filled with Japanese-style egg mayonnaise and topped with Nomad caviar. • Replacing the traditional scones is the Kinako & Matcha Tropézienne with Yuzu Jam, created exclusively for this collaboration. Sunny vibes, Amalfi style - right in Tanjong Pagar! • Just popped by the new Fortuna Terrazza, opening 1st October at Craig Road, and honestly, it feels like a little slice of the Italian coast has landed in Singapore. From the team behind Fortuna Italian Trattoria (#28 in 50 Top Pizza Asia Pacific), this café-cum-brunch terrace promises sunny flavours and relaxed brunch vibes. • We started off with the Buongiorno Toast—their take on the open-faced breakfast trend. Thick-cut, juicy, maple-glazed Australian pork, melty provolone, and a truffle mayo that just ties everything together. And the sourdough was soft, pillowy, but with enough bite to hold it all without turning into a soggy mess. • Next up was the Aglio & Olio Benedict, with the true star being the rosti base. Thin potato shreds, expertly salted and fried in garlic and olive oil, provided a crisp, flavourful foundation for the poached eggs, wilted greens, and a cloud of airy Hollandaise piped right at the table. • If you’re after something more indulgent, the IFC Burger (Italian Fried Chicken) doesn’t disappoint. The chicken is juicy, coated in a fragrant herb batter with cornflake crumbs, and paired with a shredded apple coleslaw that cuts through the richness. • Lastly, the Mortadella is not to be missed: smoked stracciatella lent a creamy richness, pistachio crumble added a subtle nutty crunch, and fresh basil brought aromatic brightness, making each bite layered, fragrant, and utterly satisfying. • Drinks get the same attention. Tropical bellinis come in peach, lychee, and basil-cucumber, each finished with a light lemon foam.
