Enjoy all the craveable flavors of fall in one skillet! ???? Butternut squash, gnocchi, spinach and our made-in-house sausage creates the perfect cozy meal. Recipe below ⬇️ Serves 4 2 tablespoons unsalted butter 1 pound Whole Foods Market mild Italian pork sausage (casings removed) 1 small butternut squash (about 3 ½ cups, cubed) 1 small yellow onion, diced 4 cloves garlic, minced 1 ½ cups 365 brand chicken broth 1 pound 365 brand potato gnocchi 5 cups (about 5 oz) packed baby spinach ½ teaspoon sea salt ¼ teaspoon black pepper ½ tablespoon fresh thyme, minced ¼ teaspoon nutmeg ¾ cup pecans, roasted and chopped (optional) Parmigiano Reggiano to taste (optional) Red pepper flakes to taste (optional) 1. In a large skillet over medium heat, cook sausage until brown. Remove and set aside. 2. Melt butter in the same skillet. Add onion and garlic; cook until softened. Stir in squash and cook 10–12 minutes, until tender. 3. Add gnocchi and broth. Cover and cook 2–3 minutes, until gnocchi is tender. 4. Stir sausage back in. Add spinach a handful at a time, until wilted. 5. Season with salt, pepper, thyme and nutmeg. Serve in bowls topped with pecans, red pepper flakes and fresh Parmigiano Reggiano if desired.
