Nashville Hot Fried Salmon Sandwich ???? Hot Seasoning Mix: 1 tbsp cayenne 1 tbsp hot paprika 1 tbsp smoked paprika 1 1/2 tsp black pepper 1 1/2 tsp salt-free poultry seasoning 1 tsp garlic powder 1 tsp ancho chile 1/2 tsp dry mustard Makes about 1/2 cup of seasoning; store leftovers in a sealed container. Fried Salmon 2 (6 to 8 oz each) salmon fillets sliced down the center 3 cups buttermilk, divided 2 tbsp + 2 tsp Kosher salt, divided 2 cups all-purpose flour 1/2 cup cornstarch 2 tbsp hot seasoning mix (recipe above) 1 egg 2 tbsp cayenne hot sauce Canola oil, for frying 4 tbsp butter 1 tbsp hot seasoning mix (recipe above) 2 tsp cayenne 2 tsp honey 2 tbsp hot frying oil Slaw: 1 1/2 cups shredded cabbage 1/4 tsp Kosher salt, plus more to taste 1/2 tsp Thousand Island Dressing Pinch of cracked black pepper Other sandwich ingredients: 1/4 cup mayo 2 tsp cayenne hot sauce 4 Brioche buns or Kings Hawaiian Buns Pickle slices or spheres Steps Prepare the hot seasoning mix by mixing all the spices together thoroughly. Set aside. Dredge each salmon fillet lightly in seasoned flour, then dip in buttermilk/egg, then back into the seasoned flour. Get a good, thick coating in the second dredge. Shake off any excess flour. Rest the dredged chicken for 30 minutes on a clean pan. Pour enough canola oil into your pot to reach about 3" high. Heat the oil to 375°F. Fry the chicken salmon in batches, do not crowd the pot. The oil temp will drop to 325-350° but maintain the heat so that it doesn't dip below that. Let the oil heat back up to 375°F in between batches. While the salmon is frying, in a separate pot, prepare the Nashville sauce. Melt butter with the seasoning mix, cayenne, Worcestershire, Louisiana, brown sugar, apple cider vinegar & honey. Add some of the hot frying oil and stir. Keep warm. Combine premise slaw mix with thousand island dressing. Set aside. To assemble-toast & butter your buns, toss salmon in Nashville sauce, Ass mayo or spicy Mayo to your bottom bun, top with fried salmon, slaw & another bun. Serve with fries & pickles. Unless you’ve been living under a rock I’m sure you all are aware that birria queso tacos are one of the most coveted food items currently. This dish is composed of slowly cooked meat, typically beef in a crispy corn tortilla served with a rich both known as “consumé “ for dipping. . . I live in Atlanta & it can be a task scouting out authentic Mexican restaurants that serve this, but I’m happy to say #ElIndo is here to deliver! . . I decided to try their traditional steak tacos as well as their queso birria & I would give them a 7/10! The food came quickly, similar to fast food but you do have the option to dine in. The food is priced well and you get A LOT for your money. I could barely finish 2 tacos they’re so big. I did have to add lots of lime, salsa and some salt to get the flavor to a level I’d prefer, so I took off a few points for lack of flavor.
