Recipe?Fiber Toast with Whipped Feta, Marinated Zucchini, Sun Ripe Tomato, Fresh Basil and Roasted Pumpkin Seeds❤️ Sandwiches and toasts are GREAT to eat for lunch. Use fresh ingredients, fun combinations, balanced nutrition and get pure deliciousness. This toast might not look like much but is probably one of my favorites ever. The recipe of the chili marinated zucchini can be found on my blog. ❃ How to Make? Use a blender, stick blender or mash together feta cheese with some thick (Greek) yoghurt to a creamy texture. Roast you bread in a pan. Top the bread with the whipped feta, add your marinated zucchini and sliced tomato. Finish with some roasted pumpkin seeds, chopped fresh basil, sea salt and a drizzle of high quality olive oil.?❤️ Hope you like it! Recipe? Swedish Chocolate Balls - but raw bliss ball version? Oldie but Goldie. This photo was taken almost 5 years ago but when a recipe (and photo) is good you can always come back to it. Just as good when having a sweet tooth and want something sweet, or when needing a snack when having a lack of energy.? ❃ How to make? Place 70 grams of pitted dates, 15 grams coconut oil, 0,5 cup fiber, gf or ordinary oats, 2 tsp cacao, 30 grams of peanut butter and 3 tbsp of water in a blender. Mix thoroughly. Preferably place the dough in the fridge for 10’. Then roll balls of the dough and roll them thereafter in grated coconut. Place in the fridge to let them set a bit before serving. ‼️Whenever a Friday, weekend or holiday is coming I know that many people get stressed and have anxiety over eating a bit extra or something that is ”not supposed” to be part of their diet.‼️ Remember, it’s completely ok and natural to eat a little bit extra sometimes in terms of more food in measure or in terms of more calories. You don’t need to cut out the carbs or fats before a weekend coming up. You don’t need to starve or eat less today or any other day to be able to eat during a weekend. You don’t need to workout extra much because it’s weekend. You don’t need to compensate the amount of food you have eaten during the weekend with less food and extra workout AFTER the weekend either. Everything you eat during the weekend is just food. It’s food that has a meaning and purpose in your life too, and shall not - possibly - be added into a ”bad/unhealthy food” category. I get it, there was a time I had this kind of relationship to food too. I thought that it was me having control over food, diet and health and restricting myself in various way, but guess what… you are instead giving food the control over your body and well being when doing like this. Instead try to: ❃ Eat regularly, including carbs, fats and proteins. ❃ Have daily movement and workout if you want to (totally ok with a rest day too) but don’t workout extra much because… ❃ Try not to categorize the food into ”bad/ unhealthy food” and ”good/healthy food”. See all foods as just FOOD that you can eat if you want to and that they all bring a purpose to ones health and life. ❃ Try not to have control over every single calorie and macro during the weekend. That’s just another version of how the food is controlling you. If you eat a burger, drink some glasses of wine, have some cookies, candy, snacks or ice cream this weekend, it won’t ruin your shape and evolvement. Be kind to yourself and don’t miss out on life just because of food, ok?
