Recipe (serves 8): ◾️ 2 tbsp olive oil ◾️ 1 clove garlic, minced ◾️ 3 lbs lean ground beef ◾️ 1 large onion (diced) ◾️ 1 large green bell pepper (seeded and chopped) ◾️ 1 tbsp ground cumin ◾️ 3 tbsp chili powder ◾️ 2 tsp crushed red pepper ◾️ 1 tsp dried oregano ◾️ 2 dried bay leaves ◾️ 1 can (28 oz) diced tomatoes ◾️ 3 cans (8 oz each) red kidney beans ◾️ 1 can (27 oz) tomato sauce ◾️ Salt and pepper to taste How to make it: Brown the ground beef in a large pot, then drain the excess fat and set aside. In the same pot, heat olive oil over medium heat and sauté the onion and bell pepper for about 5 minutes until softened. Add garlic and cook until fragrant Stir in cumin, chili powder, crushed red pepper, and oregano. Return the browned beef to the pot and mix well. Add bay leaves, diced tomatoes, tomato sauce, and beans. Bring to a boil, then reduce heat and let it simmer uncovered for 45 minutes, stirring occasionally until thickened.
