This was the best thing I could have done for myself. A full spread with endless variations. It’s interactive and you get to really engage with your food. I highly recommend you salt cure your steak in the fridge for a couple days for a supreme beef flavor. It makes all the difference. Kbbq at home…very fun and smoke alarm did not go off! I love you ❤️

This was really good but the eggplant omelette could have been better. Although not at all traditional, I liked the idea of adding tomato paste to the egg mixture but it made the eggs unmanageable and the whole thing kind of messy. I would suggest trying this without the added condiments and maybe a non-stick pan. No further notes. Another food fantasy materialized ????

It’s the first snow fall of the season in New York so I woke up and decided to make one of my favorite cozy meals. These braised meatballs are pure comfort. Persimmons start hitting the grocery store shelves around this time of year and are a fall treat worth taking advantage of. This is a Hachiya persimmon, not to be confused with the Fuyu persimmon - a crunchier, more forgiving variety. The Hachiya must be super ripe to fully enjoy its sweet, almost custard-like interior. Otherwise It’ll leave your mouth feeling dry and fuzzy. Might try and hang a few of these up to dry this year. Great way to preserve and apparently really delicious. Enjoy ❤️ • #persimmon

Yes, I know it sounds weird but it works and it’s a combo I had a lot as a kid. The new @oonihq Volt 2 indoor pizza oven is no joke. I double-proofed my dough to get it extra soft and airy by using the proofing feature, then got to 600 degrees in about 5 minutes and cooked my pie perfectly in under 10 minutes. Around this time 2 years ago I was cast as a contestant on Season 4 of Next Level Chef. I was traveling around South America during the casting process and remember doing my first interview audition at a dingy hostel in Cusco, Peru with very bad WiFi. It was nearly 5 months later that I got a call and was told I’d be flying to Ireland the next week to begin filming. Hurry up and wait, as they say. I was in an awful headspace at the time and felt too weak and vulnerable to put myself out there but I did it anyway. I was well aware that these types of opportunities don’t come twice. Unfortunately I didn’t make it far in the competition but that paled in comparison to the experience I had and the people I met along the way. Moral of the story, always say yes in the face of fear or uncertainty. You may not “win” you may not “succeed” but there are incredibly valuable lessons and connections to be made along the way.
