We are celebrating Eid at a time where people are forcefully being kicked out from their homes in Palestine, civilians are being unjustly killed on the streets of Gaza and schools with young girls are bombed in Afghanistan.

Today I send you my love and prayers to all those who are suffering.
I send you sincere condolences to those families who have lost ones to oppression, bombings and COVID.

My efforts may seem very small in the face of what is happening in the world but I will continue to use this small platform to side with humanity in hopes to end the unjust suffering to our fellow humans.

Strawberry Nice Cream Bars?

When you have a bunch of bananas about to go bad and you don’t have the patience to bake Banana Bread, the easiest no bake recipe you can make with ?are these bars! 
.
They have a soft and slightly crunchy base of almonds, cacao and dates. Then topped with a thick, mousse-like texture of banana nice cream sitting on top of the base. 
Each bite is bursting with juicy strawberries hidden inside the nice cream, making it the perfect summer snack!

Recipe??
⭐️For the base- in a food processor, mix 2 cups of almonds, 1 cup pitted dates and 1 tablespoon of cacao powder until a sticky mixture forms. Press this batter into the base of a baking tray, even out the top and keep aside. 
⭐️In the same food processor, add 3-4 frozen bananas, 1 cup coconut cream (the thick part), 1/4 cup maple syrup (you can use less or more depending on your preference to sweetness) and 2 tablespoon cacao powder. Whizz up these ingredients to form a nice, thick and smooth ice cream like consistency.
⭐️Pour the nice cream over the base and bury down whole, fresh strawberries inside the nice cream. 
⭐️ Place the tray in the freezer for 2-3 hours until it is firm. When you are ready to serve, take it out of the freezer 10 minutes before and then slice.

?Strawberry Cheesecake?

I had this cheesecake a few years back at a friend’s place and nothing I tried after that compared to this one. So she kindly shared the recipe with me. It’s not vegan, but I will try to create a vegan version of it soon.

The texture is so creamy and fluffy with notes of tanginess from the sour cream and topped with the perfect glaze of fresh Strawberries ??

Here’s the recipe??
Ingredients:
⭐️200 grams digestive biscuits.
⭐️85 grams butter.
⭐️400 grams cream cheese.
⭐️2 large eggs.
⭐️140 grams caster sugar.
⭐️1 Tbsp vanilla extract. 
⭐️450 ml sour cream. 

Method??
⭐️In a pan over low heat, melt the butter and then add the crushed digestive biscuits. Give it a good mix and press it to the base of a round cake tray.
⭐️In a food processor, mix the cream cheese, eggs, vanilla extract and half the caster sugar. Pour this over the base and bake for 20 mins in a preheated oven at 180C.
⭐️While the cake is baking, mix the sour cream and the rest of the sugar well. Pour this over the cake after its baked for 20 mins and bake for a further 10 mins. Allow the cake to cool completely and refrigerate for 8-10 hours or overnight.

For the ?Glaze:
⭐️Place 200 grams of fresh strawberries with 50 grams caster sugar in a pan over low heat. Once the strawberries are soft, mash them with well into a smooth paste. Allow to cool and thicken. Pour it over the chilled cheesecake. Place in the fridge for another few minutes to set and then slice and serve.
